Chocolate Pudding

4 Portions

8 dl milk
1 dl cornstarch
1 dl raw sugar
2 egg yolks
0,5 dl cocoa
1 tablespoon vanilla sugar


Mix all ingredients in a pot. Stir with a whisk from the beginning until it's heated. Cocoa, sugar, eggs and milk are all ingredients that easily burns so be careful. When the mix gets thicker, turn down the heat or remove the pot from the heat.


When the mix gets thicker, turn down the heat or remove the pot from the heat. As soon as the pudding gets thicker stir in the vanilla sugar.


Transfer it to serving bowls and let it cool off. Serve with whipped cream, whipped cream and strawberries or as I did for my husband. Add a bit of Baileys to the cream before you whipped it.



Grilled Tuna with Mango Salsa and Sushi Rice


Marinade
2 tablespoons olive oil
2 tablespoons lime juice
1 cloves garlic, minced

Mix ingredients and rub 2 tuna steaks with the mixture. Let the steaks marinate in refrigerator for a few hours.

Mango Salsa
1 mango
2 spring onions
1/2 red bell pepper
lime juice
handfull of coriander leaves

Chop mango, spring onions, coriander and pepper and combine in a bowl. Add a little bit of lime juice. Chill in refrigerator.

Sushi Rice
Sushi rice
2 tablespoons rice vinegar
1 tablespoon sugar
1 pinch of salt.

Cook the rice according to the package. Mix together rice vinegar, sugar and salt in a saucepan and heat until sugar have dissolved. Let it cool off and then stir the mixture carefully into the cooked rice.


Spice mix for tuna
2 tablespoons paprika
1 tablespoon cayenne
1 teaspoon salt
1 teaspoon dried thyme
1 teaspoon dried basil
1 teaspoon dried oregano
1 tablespoon garlic powder

Mix all ingredients.

Remove the marinated tuna steaks from the refrigerator and rinse. Rub each tuna steak with the spice mix (you can also add little bit of oil to the mix). Either cook the steaks in a pan or on the grill for a few minutes on each side.
